Creme Egg Cheesecake ~ Extra Easter Bake!


I do rather love creme eggs, however never fancied the creme egg brownies etc that pop up every year. I've never tried them, just the look is far too sickly for me. However, I came across a creme egg cheesecake, and because it only has small pieces of egg inside I thought I'd give it a go!
It was also super simple and the result looked and tasted far better than I ever expected and following requests, here's the recipe which is similar to the one I first found on www.tamingtwins.com 



INGREDIENTS

For the base ~ 
150g Digestive biscuits
80g Butter (melted)

For the filling~
280g Creme Cheese aka Phillidelphia 
70g Icing Sugar Sifted
280ml Full fat double cream whipped
Aprox 2 bags of mini creme eggs

To decorate~
Milk chocolate melted 
Icing sugar, one batch of white (or melted white chocolate) , one batch mixed with orange food gel 

INSTUCTIONS

  1. Making your base ~ Crush the biscuits in a bowl, I use the end of a rolling pin to get a fine crumb-like texture. 
  2. Melt your butter, pour and mix with the biscuits then press this into your tin.
  3. Combine the whipped cream, icing sugar and cream cheese together in a bowl.
  4. Cut your mini creme eggs into small pieces, about quarters and fold into the mixture.
  5. Pour your mixture into your tin, over your biscuit base and smooth with a palette knife.
  6. Chill in the frigde for around 3 hours, longer the better. 
  7. Melt your milk chocolate, I do this in a bowl over boiling water. transfer into a piping bag and pour over. Leave the chocolate to cool slightly before pouring over to ensure the cake doesn't start to melt. 
  8. Make your icing sugar with water, and colour half with orange food gel. Once in piping bags, drizzle over the cake as you did the chocolate.
  9. Lastly to decorate, I cut some more mini creme eggs in half and placed them on top of the cake. This is easier to do if they've been in the fridge a while!

Spring Toddler OOTD



What a glorious week we've had here! Beautiful sunny days, is it safe to say we're well and truly in to Spring now?! We had a lovely day out this week, and Mia wore a few new bits so thought we'd do an OOTD. I love this, it's so fresh, even if it makes my "baby" look far too grown up! But hey, that's what happens right?

Easter Bakes


The Easter eggs have been in the shops for weeks so I can start making these right.....?
I picked up these cute Easter cookie cutters from The Range a few weeks back and couldn't wait to try them out! I use a really quick and easy biscuit recipe which I know I've shared several times but it tastes great and works so if it isn't broken and all that!






Mia had great fun decorating her Easter Egg biscuits with these coloured icing pens.
I iced mine with Royal Icing and the chicks were done with sugar paste.



Baking doesn't have to be hard! One of my all time favourite Easter treats are these super easy cornflake cakes. I think I first had these back in junior school for break, back when biscuits and cakes were allowed as snacks, and we've made them ever since. I made these with some of the young family members and also with Mia and they all loved helping (and eating straight out of the bowl!)






Recipe:
150g Marg
150g Sugar
150g Golden Syrup
50g Cocoa
200g Cornflakes

Add some mini eggs and some cute chicks to decorate.

Silent Sunday


Toddler Easter Cards

With Easter approaching, I've been scouring Pinterest for Easter and Spring inspired art and crafts for Mia and I to do together. This year she will start to learn about Easter and I thought with her being such a messy crafty girl we would make our own Easter cards together.


She particularly loved this activity as it involved painting her feet and although she giggled through the morning (because "it tickles Mummy") the end result was great!



The feet worked, and we had found another design which involved hand prints as flowers but wiggly fingers just made for lots of mess - the feet were most definitely easier with a 2 year old!

Next in our Easter crafts will be our bakes which will be up shortly!

Crafty Easter Haul


Mia absolutely loves crafty activities, colouring, painting, generally getting messy....what toddler doesn't? So with Easter coming up and the shops full of activity ideas, it was the perfect excuse to have a little splurge! All of these items are from The Range & Hobbycraft.


First up that caught my eye was this Easter Bunny STOP Here sign, at only £1 how could I not? Some mini Easter chicks which will probably be used on our cornflake cakes recipe here which were again only £1 and some bright yellow sugar paste to decorate some Easter themed cookies as I bought some new cutters (again £1!) 


Thanks to Pinterest I've found some super easy toddler appropriate Easter cards to make and paint together hence the card and paints (can you guess from the colours what the design will be?) Some googly eyes and flower stickers to decorate too.


For the Easter weekend itself, we're going to do an egg hunt as this will be the first year Mia can properly take part so these plastic eggs will work brilliantly. They're just big enough to fit the mini creme eggs or mini eggs in, perfect for a 2 year old. This also meant she needed a little bucket to collect her eggs. There was so many to choose from, several felt ones and these tin ones which Mia herself chose. Buckets were £1. 


Lastly these little hanging decorations which will go up in Mia's room, again only £1. Just a cute little idea to introduce Easter to her. Hopefully over the next week I'll post the results of our crafty purchases, cards and food. All these were very inexpensive and just lovely ideas for us to do together.

Disney Chat

That's it, Disneyland Paris is booked! 

For us, this will be the absolute holiday of a lifetime. This will be our first family holiday and where better to spend it? I have never been to Disneyland, but have dreamed for so so long! 

Last year was quite a dark time, and resulted in us being all too aware that you only live once and circumstances can change too quickly. With that in mind, a lot of hard work and a little help from family at Christmas we have booked our holiday. 

So many what ifs and questions around money, is Mia old enough, can we afford time off work bla bla but sod it, Mia is only young once and what's the point in working bloody hard if you can't enjoy it! 

So very shortly we'll be off, and before I'll be doing some posts on outfits & travelling with a toddler essentials mainly for me because I'm frankly terrified so hopefully this will help me channel my obsession to be organised and anxiety issues. 

Mia is so excited. (As are we!) At 2, I never expected her to be so aware of the whole concept but every day she'll tell me we're off to Disneyland... But "Not yet Mummy" . She's going to give Minnie a big cuddle and hold Goofy's hand. We spend hours together watching YouTube videos on Disneyland to prepare her which she loves. Hubby's also informed me of all the rides he'll be going on!

My 12 Happy Months ~ February 2015

February has been super busy, first up we had Valentines.


Hubby completely spoilt me this year, and we also had Valentines away just the two of us which was a first and whilst I missed my little one every second, it was really important to have to us time. I'd bought him a Formula Renault experience (mega F1 fan) which we did first and he bloody loved it, before we headed for some retail therapy, a rare adult only meal and he even took me to the cinema. The whole weekend was perfect, life gets in the way so it was really lovely to be able to have some time away from everything and focus on the two of us. Being Valentines was just a bonus. 

The week after was his birthday which was a lovely family day. Lazy morning in bed, TGI's for lunch and cake with family for tea!


Towards the end of last year, I planted no end of bulbs in the garden and they are now all coming up. I've no idea what any of them are or what I put where but am excited to see the start of them coming up and hopefully in the next few week my garden with be bursting with colour! 
Bring on the summer :) 

Lots of birthdays for us in March and with a cheeky new camera purchase, lots more photos and blog posts planned.
